Penuche Icing --TNT

Penuche Icing --TNT

Melt 1/2 cup butter
Add 1 cup brown sugar , packed.
Boil and stir over low heat 2 minutes.
Add 1/4 cup milk, bring to a boil stirring constantly.
Cool to lukewarm.
Gradually add 1 3/4 to 2 cups confectioners sugar.
Beat until thick enough to spread.
If too thick then with hot water.

My mom used to make this icing all of the time. It is so good especially on Spice Cake!!

Lime Jello Mold

Lime Jello Mold

1 Package lime jello
1-1/2 c. boiling water
3/4 small can crushed pineapple
Handful of mini-marshmallows or 10 Lg. marshmallows cut up
1 Small package Philadelphia cream Cheese

Soften cream cheese before starting.
Pour boiling water over jello and dissolve.
Cut cheese in large chunks and add to jello.
Add marshmallows.
Using spoon work jello until cheese is in small chunks and marshmallows are dissolved.
Let cool in refrigerator and then add pineapple.
Refrigerate again until mold is set.
Turn out of mold onto plate and refrigerate for several hours or overnight before serving.

Blueberry Coffee Cake--TNT

Blueberry Coffee Cake with Crumb Topping--TNT
350* oven

3/4 cup sugar
1/4 cup soft shortening
1 egg
1/2 cup milk
1 1/2 cup flour
2 tsp. baking powder
1/2 tsp. salt
1 1/2 cup blueberries

Beat together sugar, shortening, and egg.
Stir in milk.
Sift together flour, baking powder and salt.
Stir this into mixture.
Fold in blueberries.
Pour into baking pan. Use 9x13 or 8x12 pan.
Batter will just cover bottom of pan.

Crumb Topping

1/2 cup brown sugar
1/4 cup flour
1/4 cup butter or margarine
1/2 tsp. cinnamon

Mix above ingredients and cut in butter to resemble small peas.
Sprinkle over batter.

Bake in 350* oven for 45 minutes.

Note: for muffins fill cups about 1/2 full.

Cake is delicious and freezes well.

Banana Nut Bread --TNT
350* Oven

1/2 cup shortening
1 cup sugar
2 eggs
1 cup mashed bananas
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup chopped nuts

Mix all ingredients in a bowl. Mix only until flour disappears! DO NOT BEAT!

Bake in 350* oven for 50-55 minutes.
Use a toothpick to check if baked thoroughly.

Pumpkin Cookies

Pumpkin Cookies

350* oven

Super easy and soooo gooood!!!!

1 15.5oz can pumpkin
1 box Spice Cake Mix

Mix ingredients together.

Drop by spoonful onto cookie sheets.
Bake at 350* for 10-12 minutes.

This is another recipe I got from my aunt and these are really good too!!

Lemon Cookies

Lemon Cookies

375* oven
8 Minutes

1 Box Lemon Supreme Cake Mix, use mix straight from the box
1 8oz. Cool Whip
2 Eggs, well beaten

Mix all ingredients together. Roll into small balls then roll the balls in powdered sugar.

Place on baking sheet about 2" apart.
Bake at 375* for about 8 minutes or until cookies are soft set.
Cool on racks.

I got this recipe from my aunt and these cookies are really good.

Indian Fry Bread --TNT

Indian Fry Bread --TNT

6 cups self-rising flour
1 tbsp. salt
2 tbsp. baking powder
1 1/2 cup powdered milk
3 tbsp. sugar

Mix together then add approx. 3 cup warm water to make a soft dough.
Pull out small amounts of dough to make into small balls.
Flatten to about 1/4" thick.
Drop into hot oil in deep fryer.
Done when pops up to the top.
Drain on paper towels.

Serve with butter and powdered sugar, or apple butter. etc.

Slice a pocket into the side and stuff with your favorite filling.

I also found if you make larger rounds they can be used for a delicious pizza crust with your favorite toppings too!

Hot Ham and Cheese Spread

Hot Ham and Cheese Spread
350* oven

1 8oz. package cream cheese, softened
1 cup shredded cheddar cheese
3 slices smoked ham, finely chopped
1/8 tsp. cayenne pepper

Crackers

Mix all ingredients until well blended.
Spread into 9" pie plate.
Bake 20-25 minutes or until lightly browned.

Serve warm as a spread with crackers.

Yield: 10 servings...2 tbsp spread and 5 crackers each.

Old Fashioned Rum Cake

Old Fashioned Rum Cake

1 cup shortening
2 cups sugar
4 eggs
3 cups cake flour
1 tsp. soda
1/4 to 1/2 tsp. salt
1 cup buttermilk
1/4 cup Rum or 2 tsp. Rum flavoring
1/2 tsp. vanilla

Cream shortening.
Add sugar to shortening gradually and cream together well.
Add eggs and blend well.
Sift dry ingredients together.
Add dry ingredients and buttermilk alternately beginning and ending with dry ingredients.
Beat well after each addition.
Add rum and vanilla.

Bake in slightly greased and floured tube pan for 15 minutes at 375* then decrease oven to 350* and bake for 30 minutes more.
After cake cools, remove from pan and baste with Rum Sauce (recipe follows).

Rum Sauce

1 cup sugar
1/2 cup water
2 Tbsp. brown sugar
1/2 cup Rum

Combine all ingredients in pan and heat until it boils.
Remove from heat and dip sauce over cake.
Place cake in a box or can and allow to penetrate.

Beat 1/2 cup softened butter or margarine
1/4 cup honey and if desired,
1/2 tsp. grated orange peel until fluffy

Honey-Cornmeal Drop Biscuits TNT

450* oven
10-12 minutes

1 3/4 cups baking mix (Bisquick)
1/2 cup yellow cornmeal
1/2 cup milk
2 tbsp. honey

Mix all ingredients until dough forms, beat 30 seconds.
After beating, drop dough by rounded spoonfuls onto ungreased cookie sheet.

Bake until golden brown.....10-12 minutes

Sugar Cookies

Sugar Cookies

375* Oven
10-12 minutes

1/2 Cup Butter
1 Cup Sugar
1 egg
1 Tbsp. Milk
1/2 Tsp. Vanilla
1 1/2 Cup Flour
1 Tsp. baking powder

Cream butter and sugar together.
Beat in egg, milk and vanilla.
Sift flour and baking powder, stir in with butter mixture.
Drop by Tsp. on greased cookie sheet.

Bake 10-12 minutes.

Yield, about 32

Caramel Popcorn Balls --TNT

Caramel Popcorn Balls --TNT

2 Cups White Sugar
1 Cup White Karo
4 Tbsp. Butter

Combine ingredients, but do not stir.

Cook until amber colored.
Remove from heat, and add 2 Tsp. water & 1 Tsp. soda.

Pour over 1-1/2 gal. popped corn, shape into balls

Enjoy!!

Lemonade

Lemonade

2 cups lemon juice
1 1/2 cups sugar

mix well and keep in glass jar in the refridgerator.

To Serve:
Pour 1/4 cup syrup into glass, fill glass with ice and water.

Stuffed Mushroom Caps

STUFFED MUSHROOM CAPS--TNT

350* Oven, 20 minutes

Enough for a crowd !!!

4 containers Button Mushrooms, clean and cut out centers.

Mix Together:
1 Cup Mozzarella Cheese, Shredded
1 cup Cheddar Cheese, Shredded
1 cup Parmesan Cheese, Shredded
1 cup Mayonnaise

Stuff Mushroom Caps with cheese mixture.

Bake for 20 minutes in 350* oven or until cheese is melted.

Note:
This recipe is from my cousin, Elaine Leslie. Her family loves them!
I divide it by 1/4 for Kevin and I.

Freezer Pickles TNT

Freezer Pickles TNT

2 quarts Unpeeled sliced cucumbers
2 tbsp. Salt
2 Medium Onions Sliced
1 tsp. Celery Seed

Cover cucumbers with water, mix in salt. Let soak for 2 hours.

Mix, 1 1/2 cup Sugar & 1/2 cup Vinegar.
Bring to a boil and let cool.

Drain and squeeze cucumbers. Add onion and celery seed, stir.
Pour sugar and vinegar mixture on cucumbers and onions, mix.

Freeze in containers.


Note:

I shredded the cucumbers and chopped the onions the last time I made this and it was like a relish.

This has a delicious sweet, sour taste and was my great-grandmothers recipe. I have made many, many times!

Peach Cobbler Crumb Cake--TNT.

Peach Cobbler Crumb Cake TNT
quick, easy, and delicious!!

1 (16oz.) can of peaches in light syrup
1 box yellow cake mix
1 stick of butter sliced

Pour peaches and syrup in a 9x13 cake pan.
Sprinkle cake mix over peaches.
Top with butter slices.

Bake at 350 degrees until golden brown about 25-30 minutes.
Serve with cool whip or alone.

This is a delicious quick and easy dessert!

NOTE: I use the next larger size can of peaches and cut them into smaller pieces.

Oreo Delight--TNT--

Oreo Delight--TNT--

1 16 oz. package Oreos
2 sticks butter-- melted
1 8 oz.pkg. cream cheese, softened
1 c. Confectioner's sugar
16 oz. Cool Whip
1 6 oz. pkg. chocolate instant pudding mix

Crush oreos, use rolling pin or food processor. Save 1/2 c. crumbs for topping.
Place crumbs in a 9x13 pan
Pour butter over crumbs and pat crumbs down evenly
Refrigerate 1 hour

Cream together...Will be stiff :
cream cheese
sugar
and 12 oz. of cool whip
Spread over crumbs and refrigerate 1 hour

Prepare Pudding by package directions using a total of 3 cups milk.

Spread over top of cake followed by remaining cool whip
Sprinkle remaining crumbs on top. Refrigerate 1 hour

**NOTE**
Cake takes a while to make but is well worth it.

Chocolate Rum Cake --TNT--

Chocolate Rum Cake --TNT--
350º for 45 minutes, if 2 layers give less time

2 c. sugar
3/4 # butter
6 eggs
2 cups flour--mix in
3 tsp. baking powder
8 tsp. Nestle Quick Chocolate mixed with--
2/3 c. White Rum

Bake in 9x13 pan for 45 minutes at 350º .
If making 2 layer cake allow less baking time.

Icing:

1 box light chocolate frosting mix, instead of using water called for use same amount of White Rum

**NOTE**

Recipe is from a friends mom from Russia!
I have made it many times and it is very good!!

Apple Cake -- TNT--

Apple Cake --TNT--
350º for 45 minutes

2 c. sifted flour
2 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon
1/2 c. shortening ....my aunt used corn oil
4 eggs , lightly beaten
2 c. sugar
4 c. finely chopped apples

Nuts (Optional)

Mix dry ingredients
Add shortening and eggs
Fold in apples and mix well
Pour into 9x13 pan

Bake 45 minutes at 350º

**NOTE**
This recipe was given to me from my aunt, Daddy's sister.
It is very good!

Zucchini Bread----TNT----

Zucchini Bread ------Preheat oven to 350º

3 eggs beaten
1 c. oil
2 c. white sugar
3 tbsp. vanilla
1 tsp. soda
1 tsp. salt
3 c. flour
1/2 c. chopped nuts
2 tsp. cinnamon
2 c. shredded zucchini

Mix together: eggs, oil, sugar and vanilla.
Stir the soda, salt, flour, and chopped nuts together.
Add to the cream mixture.
Stir in Cinnamon and shredded zucchini.

Divide dough into 2 greased loaf pans.

Bake in 350º oven 1 Hour.

** Note: dough may be divided into muffin pans or mini loaf pans, adjust baking time according to pan size!

Scrabble, cereal snack mix!!--TNT--

Scrabble, Cereal snack mix!-----Preheat oven to 250º

1 lg. box Cheerios
1 lg. box rice chex
1 lg. bag thin pretzel sticks
1 bag peanuts (I prefer Cashews, just my personal choice!)

2 cups oil
2 tbsp. Worchestershire Sauce
1 tbsp. salt
1 tbsp. garlic salt

Place first 4 ingredients in a large roasting pan.
Mix Worchestershire sauce well with oil,
Pour over ingredients in pan stirring well as you pour.
Mix both salts and sprinkle over cereal mix while stirring.

Place in pre-heated oven and stir every 15 minutes for 2 hours!

**Note; be sure to stir everything up from the bottom of the pan each time you stir or the oil etc. will just lay on the bottom and not coat the cereal as it should!
