Zucchini Bread ------Preheat oven to 350º
3 eggs beaten
1 c. oil
2 c. white sugar
3 tbsp. vanilla
1 tsp. soda
1 tsp. salt
3 c. flour
1/2 c. chopped nuts
2 tsp. cinnamon
2 c. shredded zucchini
Mix together: eggs, oil, sugar and vanilla.
Stir the soda, salt, flour, and chopped nuts together.
Add to the cream mixture.
Stir in Cinnamon and shredded zucchini.
Divide dough into 2 greased loaf pans.
Bake in 350º oven 1 Hour.
** Note: dough may be divided into muffin pans or mini loaf pans, adjust baking time according to pan size!

I love zucchini bread, except I use yellow summer squash. I usually freeze loaves of it when the squash is plentiful in the summer.
