New Recipes Coming Soon !!!!

Hi Friends,

I know its been a long time since I was here and posted anything new. I have had a lot going on the past few months, including major surgery. Everything is ok now, so I'm good to go...

I will be starting to post some more of my family recipes very soon.

I still have a mountain of recipes to go through and post on here... so be watching!

Penuche Icing --TNT

Penuche Icing --TNT

Melt 1/2 cup butter
Add 1 cup brown sugar , packed.
Boil and stir over low heat 2 minutes.
Add 1/4 cup milk, bring to a boil stirring constantly.
Cool to lukewarm.
Gradually add 1 3/4 to 2 cups confectioners sugar.
Beat until thick enough to spread.
If too thick then with hot water.

My mom used to make this icing all of the time. It is so good especially on Spice Cake!!

Lime Jello Mold

Lime Jello Mold

1 Package lime jello
1-1/2 c. boiling water
3/4 small can crushed pineapple
Handful of mini-marshmallows or 10 Lg. marshmallows cut up
1 Small package Philadelphia cream Cheese

Soften cream cheese before starting.
Pour boiling water over jello and dissolve.
Cut cheese in large chunks and add to jello.
Add marshmallows.
Using spoon work jello until cheese is in small chunks and marshmallows are dissolved.
Let cool in refrigerator and then add pineapple.
Refrigerate again until mold is set.
Turn out of mold onto plate and refrigerate for several hours or overnight before serving.

Blueberry Coffee Cake--TNT

Blueberry Coffee Cake with Crumb Topping--TNT
350* oven

3/4 cup sugar
1/4 cup soft shortening
1 egg
1/2 cup milk
1 1/2 cup flour
2 tsp. baking powder
1/2 tsp. salt
1 1/2 cup blueberries

Beat together sugar, shortening, and egg.
Stir in milk.
Sift together flour, baking powder and salt.
Stir this into mixture.
Fold in blueberries.
Pour into baking pan. Use 9x13 or 8x12 pan.
Batter will just cover bottom of pan.

Crumb Topping

1/2 cup brown sugar
1/4 cup flour
1/4 cup butter or margarine
1/2 tsp. cinnamon

Mix above ingredients and cut in butter to resemble small peas.
Sprinkle over batter.

Bake in 350* oven for 45 minutes.

Note: for muffins fill cups about 1/2 full.

Cake is delicious and freezes well.

Banana Nut Bread--TNT

Banana Nut Bread --TNT
350* Oven

1/2 cup shortening
1 cup sugar
2 eggs
1 cup mashed bananas
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup chopped nuts

Mix all ingredients in a bowl. Mix only until flour disappears! DO NOT BEAT!

Bake in 350* oven for 50-55 minutes.
Use a toothpick to check if baked thoroughly.

Pumpkin Cookies

Pumpkin Cookies

350* oven

Super easy and soooo gooood!!!!

1 15.5oz can pumpkin
1 box Spice Cake Mix

Mix ingredients together.

Drop by spoonful onto cookie sheets.
Bake at 350* for 10-12 minutes.

This is another recipe I got from my aunt and these are really good too!!

Lemon Cookies

Lemon Cookies

375* oven
8 Minutes

1 Box Lemon Supreme Cake Mix, use mix straight from the box
1 8oz. Cool Whip
2 Eggs, well beaten

Mix all ingredients together. Roll into small balls then roll the balls in powdered sugar.

Place on baking sheet about 2" apart.
Bake at 375* for about 8 minutes or until cookies are soft set.
Cool on racks.

I got this recipe from my aunt and these cookies are really good.

Indian Fry Bread --TNT

Indian Fry Bread --TNT

6 cups self-rising flour
1 tbsp. salt
2 tbsp. baking powder
1 1/2 cup powdered milk
3 tbsp. sugar

Mix together then add approx. 3 cup warm water to make a soft dough.
Pull out small amounts of dough to make into small balls.
Flatten to about 1/4" thick.
Drop into hot oil in deep fryer.
Done when pops up to the top.
Drain on paper towels.

Serve with butter and powdered sugar, or apple butter. etc.

Slice a pocket into the side and stuff with your favorite filling.

I also found if you make larger rounds they can be used for a delicious pizza crust with your favorite toppings too!

Hot Ham and Cheese Spread

Hot Ham and Cheese Spread
350* oven

1 8oz. package cream cheese, softened
1 cup shredded cheddar cheese
3 slices smoked ham, finely chopped
1/8 tsp. cayenne pepper

Crackers

Mix all ingredients until well blended.
Spread into 9" pie plate.
Bake 20-25 minutes or until lightly browned.

Serve warm as a spread with crackers.

Yield: 10 servings...2 tbsp spread and 5 crackers each.

I started changing and adding new labels for the recipe categories last night. I'm going to be adding more today. It may take a couple of posts to do it since it only lets me add a few at a time.

Old Fashioned Rum Cake

Old Fashioned Rum Cake

1 cup shortening
2 cups sugar
4 eggs
3 cups cake flour
1 tsp. soda
1/4 to 1/2 tsp. salt
1 cup buttermilk
1/4 cup Rum or 2 tsp. Rum flavoring
1/2 tsp. vanilla

Cream shortening.
Add sugar to shortening gradually and cream together well.
Add eggs and blend well.
Sift dry ingredients together.
Add dry ingredients and buttermilk alternately beginning and ending with dry ingredients.
Beat well after each addition.
Add rum and vanilla.

Bake in slightly greased and floured tube pan for 15 minutes at 375* then decrease oven to 350* and bake for 30 minutes more.
After cake cools, remove from pan and baste with Rum Sauce (recipe follows).

Rum Sauce

1 cup sugar
1/2 cup water
2 Tbsp. brown sugar
1/2 cup Rum

Combine all ingredients in pan and heat until it boils.
Remove from heat and dip sauce over cake.
Place cake in a box or can and allow to penetrate.
